A guy at the farmers market told me my air fryer wings were steamed, not roasted, and he was right
I was at the Saturday market in Boise two weeks back, handing out samples of my gochujang wings, feeling pretty good about myself. This older guy took one bite, set it down, and said, plain as day, "These taste steamed. You're crowding the basket." I wanted to argue but he pulled out his phone and showed me a photo of his setup, single layer, nothing touching, and I realized he was right. I had been dumping 2 pounds of wings in at once because the recipe card said "cook in batches" and I figured that meant two batches, not four. So now I do one layer, flip at 12 minutes, and go another 8, and the skin actually crisps instead of going rubbery. The weird part is the total time is the same, I'm just standing there flipping more. Anyone else get called out by a total stranger over their method, and did it stick or did you go right back to your old way?
