Found a fix for sticky dough that saves my whole bake day

I bake sourdough every Saturday and last month my dough was a gluey mess by lunchtime. Tried adding flour, tried cold water, nothing worked. Then I remembered a tip from a bread forum about letting the dough rest 20 minutes before kneading, so the flour hydrates on its own. It worked like magic, no extra flour needed and the loaves came out way lighter. Anyone else tried this autolyse trick, or do you have a different way to handle sticky dough in a humid kitchen?

Ditch the extra flour and try that rest period first. It has ended every sticky mess since I learned it, and the dough comes out smooth. Great tip for anyone fighting humidity, keep it simple.
