Had to choose between a new oven or fixing my old one

My old deck oven started acting up last Tuesday, giving me a 50 degree swing in temperature. I had a big wedding cake order due in three days. The choice was to drop $800 on a quick repair or finance a whole new unit for over $5k. I went with the fix because I couldn't afford the downtime. It worked, but now I'm worried it's just a band-aid. For anyone who's been in this spot, how do you decide when to finally replace your main gear?

That 50 degree swing sounds rough for a wedding cake. But is a single repair really a sign the whole oven is dying? Could have just been a bad sensor or a loose wire. Those things happen to new gear too.

Ever had a temp sensor fail on you like that? How long did the fix actually last?

Yeah, that "bad sensor or loose wire" thing is exactly what happened to my old unit. I just replaced the sensor myself and it's been solid for over two years now. Sometimes it really is just that one cheap part.
