I finally stopped my cakes from sinking by doing one thing 3 years into baking
Three years ago I moved into a tiny apartment in Austin with a terrible oven that ran 25 degrees hot, and every single cake I made came out with a sunken crater in the middle. Last month I finally figured out it was because I was opening the door to peek at the 15 minute mark every time, which dropped the temp and killed the rise. Do you all wait the full time before checking, or is there a trick to peeking without wrecking it?
