Rant: my sister's comment about my cookies sent me back to square one after 3 months of practice
I baked chocolate chip cookies every Sunday for 3 months straight, filling two whole notebook pages with notes on oven temps and chill times, and I thought I had it down. Then my sister took one bite at a family dinner in Columbus and said they tasted "flat like the dough was tired," which honestly stung but made me realize I was skipping the salt and under-baking them at 350. So what's your go-to trick for getting that chewy center without the edges turning into crackers?
That "dough was tired" line is brutal but kinda funny. Tbh the trick nobody talks about is pulling them when the centers still look wet and puffy, then letting them sit on the hot pan for 5 full minutes before you move them, since they keep cooking from the leftover heat. Do that and the middle stays soft while the edges never get a chance to turn into crackers.
