Found out I was overcooking my risotto for 2 years because of one spoon test
Watched a line cook taste a grain off the spoon at a spot in Providence last Saturday and it still had a tiny bite, which I never checked for, I just went by time. Tried it on my own batch and it was night and day. Anyone else get taught a timing rule early and never questioned it?
