Line cook froze on 12 tickets at 7:40 on a Friday and I pulled him off the grill for 10 minutes
Place I work in Kansas City, small kitchen, 9 tables and a bar. New kid had been on the flat top about 3 weeks. Friday rush hits and he just stops. Hands shaking, staring at the rail, nothing moving. Expo is yelling and he's not hearing it.
I didn't talk to him at the grill. Walked him out back, made him drink a glass of water and count the boxes on the delivery pallet out loud. Sounds dumb but it got his breathing back. Ten minutes later he ran the rest of service clean, no mistakes.
Most kitchens I've been in would have chewed him out and lost him for good. We're short staffed as it is. Anyone got a real move for spotting this before the rail fills up, not after?
