Put in a 10x12 slab for her backyard in April, and at pour day it looked flat gray and honestly kind of dead. Went back the first week of June and the whole thing had gone this warm tan color with the cream floated up nice and even. Turned out the difference was just sun and time, plus the fact that we got lucky and it cured slow in mild weather instead of baking in 100 degree heat like my last job in July. My brother in law kept asking what sealer I used and I had to explain about five times that it was bare concrete, nothing on it yet. Anyone else notice how much a slab's look changes in that first month and a half, or is it just certain mixes that shift like that?
Honestly this sounds like normal concrete doing its thing, not some magic trick. Bare slabs shift color as they cure and dry out, that's just how it works, the gray you see on pour day isn't the final color. Sun exposure and slow curing can make a difference in how even it looks, sure, but calling it a big transformation feels like a stretch. Sealer wouldn't have anything to do with it either since you didn't put any on, so your brother in law was chasing the wrong answer. Next time it might not go the same way depending on weather, mix, and how fast it dries, so don't count on it looking the same every pour.
