Changed my mind on weighing flour after a scale test in my own kitchen
I always scooped flour straight from the bag and never gave it a second thought. Then a baker friend in Decatur had me weigh one cup of my usual scoop against a level cup on her scale, and mine came out to 5.6 ounces instead of 4.25. That is a 30 percent difference, which explains why my biscuits were always a little tough and dry. I tested it 3 more times that afternoon and got the same heavy scoop each time. Now I am wondering how many of my old recipes were really just bad measurements, so does anyone here weigh everything or just the flour?
Started weighing my flour about two years ago after pretty much the same thing happened to me. My scoop was way heavy too and it made everything dense. What got me though was when I finally weighed the rest of my stuff, my brown sugar was packed in so tight that a cup weighed almost double what it should. Same deal with oats and even cocoa powder. So yeah, it is not just flour. Once you start weighing, you find out half your pantry was messing with your recipes.
