TIL my $18 dough scraper does more work than my $200 stand mixer
I bought a KitchenAid mixer three years ago and honestly I barely use it for anything besides creaming butter. Last month I grabbed a cheap bench scraper from a restaurant supply store in Portland for $18 and it has completely changed how I handle sticky dough. I cut, fold, and shape everything by hand now and my sourdough loaves come out way more even. The mixer just sits there collecting flour dust while the scraper is in my hand every single bake. Has anyone else found a cheap tool that made them ditch an expensive one?
Ha! I heard a baker on a podcast say basically the same thing, that a bench scraper is the one tool she'd grab if her kitchen caught fire. She said she uses it for scooping up chopped stuff, cutting cold butter into flour, and getting dough off the counter, not just for bread. My mom's old pastry cutter is the same story for me, it cost like five bucks and beats the food processor for biscuits every time.
