My cousin said my sourdough looked like a 'sad pancake' at Thanksgiving
We were in her kitchen in Austin and I'd spent 2 days on this loaf. She picked it up, poked the crust, and said 'Did you forget the yeast or something?' straight to my face. I followed the recipe exactly, 500g flour, 350g water, 20 hour ferment. It just didn't spring in the oven. Has anyone else had a loaf come out flat after doing everything right? What did you change?

Float test? I've been baking sourdough for three years and never heard of that.

Honestly had the same issue until I started doing the float test with my starter. That flat loaf phase is the WORST.
