Skeptical about silicone baking mats, finally converted after 4 months
I spent years buying parchment paper by the case, convinced silicone mats were just a gimmick that would slide around and make a mess. My sister in Denver gave me one for Christmas and I shoved it in a drawer until June. Last month I ran out of parchment at 7 a.m. before making a batch of cinnamon rolls, so I grabbed the mat out of desperation. The rolls browned evenly underneath, didn't stick at all, and cleanup took literally one wipe with a damp cloth. I've used it for cookies, roasted vegetables, and even a pizza, and the edges never burned like they do on parchment. The only thing I still use paper for is lining pans with tall sides. Has anyone else had trouble getting a mat to stay flat on a warped baking sheet? That's my one remaining annoyance.

My kitchen drawer is full of stuff like that, stuff I doubted until I was forced to try it. It’s the same with my garage full of tools I bought twice because I swore the first one was junk. Once you give something a real shot past your first bad impression, it usually proves you wrong in the best way.

Warped baking sheet, huh? Yeah, I've got one that's basically a shallow bowl now. Took me a full three tries to realize my mat wasn't the problem. My cookies just slide to the middle and bake into one giant mutant cookie. Super flattering for my baking skills, let me tell you.
