Picked up a brisket hack from a guy in Lubbock who uses a cheap spray bottle for binders
Honestly, I used to smear mustard or Worcestershire on with my hands and it always made a mess plus wasted a ton. This older pitmaster at a cookoff in Lubbock told me to just fill a $2 spray bottle with apple cider vinegar and hit the whole brisket before rubbing. Tried it on a 14 pounder last Sunday and the rub stuck way more even, plus no sticky fingers mess after trimming. Has anyone else switched from a hand smear to a spritz method for the binder?
Man, that spray bottle trick reminds me of my uncle Ray. He ran a little BBQ stand off Highway 84 near Slaton back in the 90s. Guy never used a binder at all, just wet his hands and slapped the meat. Said the rub would grab if the meat was tacky enough. One summer he got a bad batch of briskets that were too dry and nothing stuck. He cussed for a week straight. Ended up buying a pump sprayer from the feed store and misting everything with plain water. Cheap fix, worked fine. Your vinegar idea sounds smarter though, that acid probably helps the bark set up nicer.
