Rant: I chose the $450 Japanese knife over the $90 set and I still feel weird about it
Back in March I was upgrading my kitchen gear and stood in the store for like 20 minutes holding a nice single chef's knife from a brand I can't pronounce versus a whole block set from a big box store. I went with the expensive one because my buddy kept saying you only need one good blade, and honestly the thing is amazing for slicing tomatoes and chicken. But now every time I need a bread knife or a paring knife I'm stuck using my old crappy stuff from college. Has anyone else gone the single high-end route and regretted missing the extras, or do you just learn to live with it?
