The jarred garlic that sat in my pantry for 14 months is still fine

I found a jar of minced garlic in the back of my cupboard last week that expired 14 months ago. It was from a brand I stopped buying after that whole recall mess in 2023, but I figured I'd give it a sniff before tossing it. Smelled totally normal, so I used a spoonful in some pasta sauce. Nothing bad happened, no weird taste, no stomach issues. It got me thinking about how we cancel a product over one bad batch and then pretend the rest of it is poison forever. Has anyone else kept using a 'cancelled' pantry item way past its date just because it still worked fine?
