Hot take: I finally saw what 6 months of sharpening my own knives did to my prep speed
I used to send my knives out to a sharpening service every 3 months. Figured it was fine. Then I got a set of whetstones from a guy at a farmers market in Portland and forced myself to learn. Took about 6 months of practice to get a consistent edge. Yesterday I prepped a 40-pound case of carrots for a julienne and finished in 45 minutes flat. Used to take me over an hour with the old dull knives. Has anyone else seen a real time difference after switching to hand sharpening?
