My uncle ran a little Italian place and he had this whole thing about pasta water. He kept a pot going all night and would yell at the new guys if they drained it too early. One time a guy dumped the whole pot right when it was nice and cloudy and my uncle just stood there with his hands on his head like someone had crashed his car. He swore the sauce came out different after that, thinner and kind of flat. The guy never did it again, but the look on my uncle's face was something else.
