The supplier swap had me questioning my menu's integrity
Learned our new supplier was selling cheaper, frozen scallops as fresh. It puts me in a tough spot since calling them out might start issues, but ignoring it isn't right.

Totally with you on picking your battles... that line about "plenty of places use frozen seafood" is so true. I freaked out once when my chicken supplier switched to a cheaper farm, but the quality was almost the same. Customers never said a word, and it saved my profit margin that month. Sometimes the stress we feel about this stuff is way bigger than what anyone else actually notices. Keeping the doors open has to come first.

You said it puts your menu's integrity in question, but does it really? If the cheaper scallops taste fine and your customers are happy, maybe the real integrity is keeping your prices stable. Plenty of places use frozen seafood and no one complains. Sometimes you have to pick your battles, and starting a fight with a supplier over something people might not even notice could cost you more than it's worth. Isn't staying in business a kind of integrity too?
