The whole pour over ritual got too fancy for its own good

I started doing pour overs back in 2016 with just a plastic funnel and a paper filter, no scale, no fancy kettle. Last week I watched a guy at a cafe in Denver weigh his water down to the gram and swirl the bed three times before every single pour. It hit me that we lost the point somewhere, the coffee tastes good if you just keep the grind consistent and use water that's not boiling. I've tried the 40 step methods and honestly my $12 setup from the hardware store makes a better cup most mornings. The obsession with equipment feels like a hobby about gear, not about drinking coffee. Has anyone else gone backwards and simplified their routine after chasing all the extras?
