Espresso machine at the shop was 8 years old, I swapped it last month and now I'm getting flack

I run a small coffee cart near the farmers market in Portland. The old La Marzocco finally died last week after 8 years of daily use, so I dropped $4,200 on a new dual boiler setup. Half my regulars say the shots taste cleaner and smoother, but one guy who comes every Saturday insists the old machine had more character and body. He told me I ruined his ritual and he might start going to the place on 12th. Is sticking with outdated gear for the sake of nostalgia actually better for a small operation, or is that just fear of change? Anyone else dealt with customers getting attached to aging equipment?

So I read the FDA's caffeine limit chart and noticed something weird

Aeropress vs French press, my 2 week experiment ended with a clear winner

So I finally did that side by side test I kept putting off. Bought a $15 French press at Target and used my Aeropress that I got for my birthday two years ago. Same beans, same grind setting, same water temp around 200 degrees. The French press gave me that gritty sludge at the bottom and the taste was kind of muddy, even after 4 minutes of steeping. The Aeropress took 90 seconds total and the cup was SO much cleaner and brighter, like night and day. Am I doing the French press wrong or is this just how it goes for everyone?
