Question about the time I tried to meal prep 14 lunches in one sitting and ended up with 9 jars of sad mush
Last Saturday I bought $47 of veggies at the store in Sacramento and spent 3 hours chopping, roasting, and packing everything into neat little containers. By Wednesday every single lunch had turned into the same gray brown stew because I used the same spice mix on chicken, sweet potatoes, and broccoli like a genius. My coworker looked at my jar and asked if I was eating refried beans for the fourth day straight, and honestly I couldn't argue. I learned that prepping 5 different meals is way smarter than prepping 14 of the same one, even if it takes more planning. Has anyone actually cracked the code on keeping roasted veggies from going soft by day 3, or am I just doomed to eat mush forever?
Who told you roasted veggies would last past day two? They lie. Broccoli especially turns into a wet sponge by Wednesday no matter what you do. The trick is to roast them plain, keep them in a separate jar, and only add sauce right before you eat. Same goes for the sweet potatoes, they just soak up whatever moisture is nearby and get gummy. So yeah, your mush was doomed from the start, not your fault.
