My sister told me my air fryer chicken was dry and now I can't stop thinking about it
My sister Gina came over for dinner on Sunday and said my air fryer chicken thighs were dry, which hit way harder than it should have. I've been using 400 degrees for 22 minutes like some recipe blog told me, but she swears by 375 for 18 minutes and flipping halfway. Now I'm second guessing every batch I make and I need someone to tell me if she's actually right or just lucky.
Switched to 375 with a flip halfway about a year ago and I'm never going back. I used to defend 400 for 22 minutes like it was my whole personality (my poor husband heard about it every single time). The thing is, thighs have more fat and connective tissue than breasts, so they need a gentler heat for longer, not a blast furnace. When you go too hot, the outside cooks way before the inside catches up, and all that juice just pours out. Gina isn't lucky, she just figured out what the recipe blogs leave out. Try her way once and check the temp, I bet you'll be texting her an apology.
