The whole "color code is a suggestion" thing gets even weirder when you think about how the codes were made in the first place. Like somebody at the factory sprayed a panel, wrote down a number, and now that number is gospel even though your guy's eye is looking at the actual car in actual daylight. And half the time the car has faded anyway so matching the code perfectly would actually look wrong on the car. So yeah the code is a starting point, not the truth. The old timers who mix by eye have seen way more cars than any database has.
