Shoutout to the guy at the bakery supply store who said 'it's just flour'
I was picking up a 50lb bag of bread flour yesterday and overheard a new baker asking a million questions about protein percentages and brands. The older guy behind the counter just shrugged and said, 'Kid, relax. At the end of the day, it's just flour. Your hands will teach you more than the bag will.' It hit me that I've been overthinking my sourdough starter for months, chasing perfect numbers instead of just feeling the dough. Has anyone else had a moment where a simple comment completely shifted how you approach a recipe?

Stopped measuring water and just went by feel.

Just went by feel" is the start of a dark path. I've seen it happen with laundry detergent, rice, and my will to live.
