The cheap bulk flour at Restaurant Depot surprised me
I run a small pie business out of my house in Cincinnati. Been using King Arthur flour for years, $14 for a 10 lb bag. Last month I grabbed a 50 lb bag of their generic pastry flour for $18 just to try it. Crust came out flakier and I saved $50 on the batch. Anyone else had luck with wholesale suppliers over branded stuff?

Is it really that serious though? I mean, you saved $50 on one batch, but how much are you actually making? A 50 lb bag of flour is a lot of pies, and if you're just running a small home business you might not even use it all before it goes bad. And pastry flour isn't the same as all-purpose, so you'd have to adjust your other recipes too. Doesn't seem worth the hassle for a few bucks. Plus, King Arthur is tested for consistency, generic flour from a warehouse might not be the same quality every time.

Read somewhere that weevils can freeze just fine so maybe that solves it.

Saw a friend buy a bulk bag of flour and half of it got weevils before they could use it.
