Vent: I thought chilling pie dough was a waste, but my coworker's crumbly crust proved me wrong.
Her messy kitchen disaster made me start chilling mine every time.

Oh man, I learned that lesson the hard way too. My first attempt looked like sandy gravel in a pan, it was so sad. Now that fridge time is my religion, no skipping it. A cold dough just makes all the difference between a mess and something actually flaky.

Seriously, calling fridge time your religion is too real. I mean, I've seen people less committed to their actual beliefs than to chilling dough. My first try at pastries was a disaster because I got impatient, and it came out like a brick. Idk, maybe it's just me, but now I treat that fridge like a sacred resting place for my dough. No shortcuts, unless you want to eat something that tastes like regret.
