I finally gave up on my old method of sealing a shower niche after the caulk turned into a sticky pink monster.
I used to just slap on whatever silicone was on sale, but after a failed attempt with a $5 tube of 'pearl' that turned a weird fleshy color in my bright white tile, I switched to a 100% silicone product my contractor friend in Tampa swore by, and now I measure, tape, and tool every single joint like it's a museum piece. Has anyone else had a sealant completely change color on them after it cured?

Switched to a 100% silicone from the hardware store after my last one yellowed, it's held up for years now.

That "sticky pink monster" line got me. My old landlord used the wrong sealant on our kitchen backsplash and it looked like a melted strawberry milkshake. Jenny_lane12 has the right idea sticking with the basic stuff, why do they even make those weird colors?

Oh man, that sticky pink monster sounds like a horror movie. @henryt18 is right, it's always the weird colors that go wrong. I had a clear one in a bathroom that turned this awful pee yellow after a few months, totally clashed with the gray grout. Now I'm super careful about reading the labels to make sure it's for wet areas. That museum piece method you're doing is the only way to go, even if it takes forever.
