My 3 a.m. brisket wrap taught me foil vs butcher paper the hard way
Ran a overnight smoke on my offset last Saturday. Got tired around 3 a.m., wrapped the flat in foil instead of the butcher paper I had sitting right there. At 10 a.m. when I pulled it, the bark had turned into a soggy mess. The point was fine, but the flat peeled apart like wet newspaper. Took me about 12 briskets to finally trust the paper for the whole cook. Anyone else wreck a good brisket because they were half asleep at the smoker?
