My uncle swore by mustard as a binder on brisket, I thought he was crazy
My Uncle Jerry from Kansas City always told me to slather yellow mustard on a brisket before the rub, and I laughed at him for years. Last weekend I finally tried it on a 12-pound packer, and the bark came out the best I've ever gotten, crispy and stuck on perfect. Has anyone else had good luck with using mustard as a binder, or do you stick with something like Worcestershire sauce?

Buddy of mine tried it and now he won't do brisket any other way.

The whole "won't do brisket any other way" thing reminds me of a guy I used to work with. He swore by using a cheap electric smoker he found at a garage sale. Said it was the only way to get consistent results. Meanwhile I spent years trying to perfect my offset smoker setup, and I still can't get it right every time. Your mileage may vary a ton with this stuff. I'd say if it works for your buddy, more power to him. Brisket is too expensive to mess up too many times in my book.
