Overheard a competition pitmaster say wood choice matters more than rub, and now I'm rethinking everything after trying pecan on my last brisket last Sunday

He said 'you can't fix bland smoke with seasoning' and after tasting that pecan wood bark against my usual hickory, I gotta ask has anyone else found a specific wood that completely changed their cook results?

Pecan does give a real nice mellow smoke, I'll give you that. But that pitmaster's take is a little strong for me. You can absolutely have good rubs or injections that add flavor the wood can't, especially on a long cook.

Nah, I gotta disagree a bit. Rubs and injections can absolutely bail out a less interesting wood choice, especially if you're layering flavors through the whole cook.
