That pitmaster in Lockhart who showed me a cheap trick with a spray bottle

I was at a small joint outside Lockhart last spring, watching this old guy work a brisket flat. He had a plain spray bottle, just water and apple cider vinegar, nothing fancy. He told me he hits the bark every 45 minutes after the stall starts. Said it keeps the crust from turning to leather without opening the smoker much. I tried it on my last 12 hour cook, bark came out way more tender. Has anyone else used a simple vinegar spray instead of mopping or spritzing with juice?
