Did he ever explain how forcing people to pay for parking and sit in traffic actually helps the economy, or did he just stop at blaming the empty ramps? Because usually that argument falls apart once you ask who exactly is getting paid to sit in a cubicle for eight hours.

Man that stall is brutal, I feel your pain. Had a 16 pounder sit at 162 for almost 6 hours last fall and I was ready to give up on it. But yeah that "bark stayed crispy" part you said is exactly why I switched over. @shanew59 nailed it though, the foil boat keeps that top crust like glass while the bottom soaks up all that juice. Ive done full foil, paper, and the boat now and honestly the boat gives you the best of both worlds. Once you see that crunch hold up past the stall you really cant go back to wrapping it tight.

The part about "95% of what I was backing up never changed" is where I gotta stop you. That's kind of the point of backups though... you don't keep them for the files that sit still, you keep them for the day something goes sideways and you need that weird version from 60 days ago that you didn't even know you needed. I've had clients say the same thing and then three months later they're asking me to restore something from before the switch, and I have to tell them it's gone because we cut retention to save $60. Sure, ask about their restore goals, but most people don't actually know what their restore goals are until they need something they don't have anymore. There's a reason 90 days is the old school default, it's because it covers a lot of dumb stuff happening.
