Watched Myron Mixon's brisket wrap demo at a local comp last month

He folded the paper tight like a Christmas present before putting it back on the smoker - no crinkled edges or loose spots. Has anyone else tried that method versus just rolling it up loose?

Three comps with tight folds and my bark turned out soggy every time, @the_miles.

That tight fold method is the real deal for sure. The key is getting the paper snug against the flat so no steam pockets form and mess with the bark. A loose wrap lets too much moisture escape and you end up with a drier brisket. Have you noticed any difference in how the bark sets up after that tight fold versus a standard wrap?
