My neighbor's 3 bean chili made me ditch my whole meal plan
Last Friday I was bragging to my neighbor Dave about my $45 weekly meal prep spreadsheet, and he just laughed and invited me over to taste his pot of chili. He used dried beans from the bulk bin, a sad looking onion, and some canned tomatoes that were probably older than my car. He said the trick is treating cheap stuff like a base, not a punishment, and let it simmer for 2 hours. That one bowl cost maybe $1.50 per serving and beat every 'budget gourmet' recipe I've obsessed over. Has anyone else had a moment where a simple cheap dish made you rethink your whole grocery list?

Watching someone just toss cheap stuff in a pot and come out with something better than your carefully planned meals is such a humbling kick in the pants.
