Pulled pork gone wrong at a church potluck taught me about bulk buying

Last month I brought 8 pounds of pork shoulder to the church potluck because I thought buying the big value pack was a no-brainer. Turned out the slow cooker on low for 6 hours just made it tough and dry, and I had to watch people struggle to chew it. The leftover went to the trash and I felt so bad about wasting $24. Now I only buy meat on sale and test a small portion first, even if it means more trips to the store. Does anyone else find that bigger packages don't always mean better savings when you mess up the cooking? How do you handle a failed dish that cost real money?

Test the smaller batch first before committing to the big one.
