My old prep cook in Tulsa told me to taste the water before I boil pasta, and I finally got it
I blew off his advice for about a month, then one night our pasta came out flat and the water tasted like nothing, so I started salting it like a stock. I ran through 4 boxes of dried linguine before the mouthfeel clicked. Anybody else taste their pasta water before the boil or just me?
Check if the pasta itself is salty enough after it cooks, not just the water before. Water can taste right but the noodles still come out bland if your sauce is light and you drained too fast. How much salt per gallon are you actually using now?
