Rant: a customer at table 12 asked why our soup tasted different, and it threw me for a loop
Last Friday a regular at table 12 sent back the butternut squash soup and asked if we swapped cooks, because the taste was off from the last 20 times she had ordered it. I explained that our squash comes from a different farm in October and it is still the same recipe, and she just nodded and said she missed the old one. Has anyone else had a regular call out a change in a dish you did not even notice yourself?
Doesn't it mess with your head when a regular notices a tiny shift before you do? Like @nancy_king29 said, the seasonal farm swap is a real thing, and it can change the sweetness or how thick the soup gets even if the recipe card never moves. I have seen the same deal with tomatoes in late summer versus the hothouse ones in winter, or garlic from one grower that is way more sharp than the next. The wild part is the regulars who eat the same dish every week are basically human taste testers at that point. They pick up on stuff the kitchen totally stopped tasting a long time ago.
