Rant: Used to set my station up left to right like clockwork, now I put everything in arm's reach based on the first 15 minutes of service
I switched my mise layout about 4 months ago after a brutal Saturday night in Chicago where I kept reaching across my body for tongs - has anyone else rearranged their whole station based on one specific rush?

Buddy of mine @felixhenderson works pastry and he told me about a night where he knocked over an entire tray of tempera. Now he keeps his cooling racks on his left side and nothing on his right. One bad move and he switched his whole setup the next day.

Moved my entire workstation after one particularly bad morning where I kept reaching for stuff on my right and knocking things over. Swapped everything to the left side and never had the same problem again. It sounds dumb but just changing your reach direction can totally fix workflow issues. Ended up putting a trash can on my right instead so now I just sweep crumbs and scraps straight into it. That single change saved me so much cleanup time it's not even funny.

One bad shift made me swap to a U shape setup and never looked back. It's crazy how one 86'd item or dropped pan can make you rethink your whole flow lol. Small changes like that save way more time than people realize.
