Heads-up from my apartment building: fermenting hot sauce can get risky.
A neighbor's pepper ferment exploded in the shared pantry last night. Keep an eye on your airlocks and burp those jars, folks.

My buddy's kimchi jar blew up in his fridge last year. He still finds cabbage on the ceiling sometimes.

A food safety article really stressed how important burping is for ferments. It said yeast and bacteria make carbon dioxide that needs to get out. Now I'm extra careful with my own projects after hearing these horror stories!

Oh wow. I always figured the burping warnings were overkill for something like hot sauce. My own half-fermented jar of jalapenos sat for a week without a check and now I'm rethinking my whole lazy approach. That visual really drives the point home.
