Picked a ceramic crock over a plastic bucket for my first hot sauce ferment
Had a choice between a 2 gallon ceramic crock and a food grade plastic bucket at the local homebrew store last weekend. Went with the crock because I worried about scratches in plastic hiding bad bacteria. The crock is heavy and a pain to clean, anyone else regret skipping the bucket for easier handling?

Plastic buckets are way easier to deal with, and the scratch thing is overblown if you just use a soft sponge. I've been using a 5 gallon bucket for years and never had an infection. Crocks are heavy, hard to move, and that porous glaze can chip over time anyway. Plus with a bucket you can drill an airlock hole easily and see through the lid if it's clear. Your back is going to hate you every time you have to lift that crock to burp it or check on things.

Well @tessaperry nailed it - I'd probably put my back out trying to lift one of those crocks, then drop it and lose a batch of sauerkraut anyway.
