Am I the only one who used to soak my fries before air frying?
I did a side-by-side test last Tuesday, and the batch I just dried and tossed in oil came out way crispier than the ones I soaked for an hour. What's your go-to method for getting them perfect?

Wait you actually did a side by side test? That's some serious fry science right there. I've been soaking mine for like twenty minutes thinking it was the secret. Now I feel like I wasted all that time for soggy fries. Gonna try just drying them next time, maybe pat them down with a paper towel real good.

My buddy swears by drying them twice, once before and once after the first fry.

My grandma's trick was a double paper towel layer, really press down. That first dry is key, but you gotta get the oil hot enough too, like 325 before you drop them. I messed up a whole batch last week rushing it. Cold fries plus not-hot-enough oil equals a glued-on disaster every single time.
