I finally baked my 100th loaf of sourdough and the consistency is finally there.
After six months of flat, dense bricks, loaf number 100 came out with the perfect open crumb and a crisp ear, which felt like a real turning point after so many fails.

Six months for a loaf of bread" just seems like a lot of time and effort. It's just food, you eat it and it's gone. I don't get the big deal about an "open crumb" or a "crisp ear.

My sourdough starter is basically a pet that I can't cuddle and occasionally forgets its own name. The six months is just the time it takes for the guilt to set in after neglecting it in the fridge.
