I finally looked up the actual weight of a whole packer brisket before trimming
I was watching a competition show and they said a typical packer loses 30% of its weight just in fat and silver skin. I found a Texas A&M study that confirmed it, which means my 16 pound brisket is really only about 11 pounds of meat. How much do you guys usually lose when you trim?

That "loses 30%" thing is exactly what I see everywhere now. It's like buying a bag of chips that's half air, or a huge container with a tiny bottom. They sell you the big impressive number upfront, but the real amount you get is way less. Makes you feel like you have to be an expert just to know what you're actually buying.

Yeah but that's only if you're really wasteful with it lol. Most people don't trim that much off.
