Tried a cheap offset smoker vs my buddy's Weber kettle... not even close
I spent a whole day babysitting my $150 offset from Home Depot and the brisket came out tough and dry. My friend's kettle with a Slow 'N Sear insert at the same cook produced a perfect smoke ring and way more tender meat after about 6 hours. Has anyone else ditched their offset for a kettle setup?

Hear me out, your cheap offset probably just has crap airflow and thin metal. Once you learn to manage the fire right, the flavor from real wood smoke beats any kettle.

Did you mess with the air intake at all on that offset? I had the exact same Home Depot special my first year, kept choking it shut trying to hold temp, and got that same leathery result. Eventually I just left the vent wide open and controlled it with the fuel instead, which helped a ton. But honestly, after fighting with that thin metal for two summers, I picked up a used Weber kettle for $40 and never looked back. The thing holds temp like a champ with way less babysitting, and the flavor difference wasn't nearly as huge as people make it out to be.
