My fear of street food vanished after one perfect meal in Hanoi.
I spent so much on restaurants before, but now I seek out local stalls. Any recommendations for other cities?

That "one perfect meal" thing is so real, it's like a switch flips. I was the same, super wary of any cart or stall for years. Then I had this grilled pork on rice from a lady on a plastic stool in Bangkok, and my whole brain reset. Now I get annoyed at myself for all the overpriced, bland meals I sat through in proper restaurants before that. For me, Bangkok is the spot where you can just point at something sizzling and it will probably change your life.

Oh man, I get that switch flip completely... had it with a bowl of pho ga from a stall with no name in Hanoi. My rule now is to look for the place with a crowd of locals, especially older folks or families. That logic served me stupidly well in Taipei... the xiao long bao at a random night market cart were better than any fancy place. Penang too, just follow the line for char kway teow. Sometimes you win, sometimes you lose a day to the bathroom, but that’s part of it.

Honestly, sometimes I wonder if we all just get caught up in the romance of it. Sure, that one perfect meal hits different, but for every mind blowing pork skewer there's a cold, greasy spring roll that makes you remember why you were wary in the first place. It's not like every city has a magic street food scene either, some places it's just not worth the risk versus a clean, reliable kitchen. I've had my share of both amazing and awful bites from carts, so maybe the real trick is just accepting it's a mixed bag.
