Blame it on cheap knives and dull edges. That's the real problem, not the person. Walk into any kitchen and you'll see people fighting with crappy tools then blaming themselves. It's the same with any skill, really. People think they're bad at something when they're just using the wrong stuff for the job.

Who here hasn't spent 20 minutes mutilating a tomato while trying to impress someone at dinner? My first apartment came with a free knife set that would have been more useful as a paperweight. You're absolutely right though, I spent years thinking I was terrible at dicing onions when really I was just fighting a blade you could have buttered bread with. Once I got one decent chef's knife, suddenly I was a kitchen genius. Funny how that works.
