Tried a new boning knife from a local smith against my old Victorinox, the difference in breaking down a whole hog was crazy

My first time using a proper boning knife I nearly took my thumb off with the old one. Still got the scar to prove it.

Sounds like you skipped the "respect the tool" step that Robert is always talking about. A boning knife isn't a toy, it's basically a scalpel for meat. That near miss probably taught you more about keeping your thumb tucked in than a year of safe cutting ever could. At least you got a free scar out of the deal, a permanent reminder to watch your fingers. Did it at least make you slow down and actually think about your grip after that?

Scars are just proof you learned something the hard way. My first time with a boning knife I was super careful because I respected the tool. That near miss taught you way more about blade control than any safe, boring practice ever could. A little blood is a good teacher, makes sure you never make that same mistake twice.
