Hit 1TB on my phone last week and lost my mind

12 years of text backups" hit me hard my friend. I found out my phone had been auto-syncing my entire text history since 2011 and I had like 30GB of old conversations with people I don't even talk to anymore. Spent three hours scrolling through old breakup texts and random work chats from 2016 instead of deleting any of it.

After seeing that staged moon landing presentation at a conference in Phoenix, I started fact checking everything

Has that retired NASA photographer actually come forward publicly with his name or is it all anonymous hearsay? I've seen the same comparison photos floating around online but no one ever pins down the original source or the photographer's identity. Would love to know if there's a verified chain of custody on those negatives you mentioned.

Coal vs charcoal heat... I think one gets a bad rap

I been using coal for about 8 years now and honestly once you get your fire management down the clinkers are way less of a problem. Charcoal burns hotter but it eats through steel faster for me, I get better weld consistency with coal on damascus billets because the heat hangs around longer in the stack. Different strokes for different folks I guess.

Unpopular opinion: Hand kneading vs stand mixer dough, I've seen a real difference over 5 years

I remember reading a 2018 King Arthur Baking study where they tested hand kneaded dough against several different mixer types. They found that the mixers actually produced more even gluten development in controlled tests, but bakers preferred the hand kneaded loaves because of slight irregularity. That's really the key difference. Machines are consistent, but consistency in gluten structure can actually give you a tighter crumb if you aren't careful with your mixing speed or if the dough warms up too fast from the motor. Hand kneading lets you feel that subtle slackness that tells you when to stop.

Shoutout to the person who told me to stop preheating my air fryer

Cut the preheat time by the 2 minute rule and you're basically splitting the difference between patience and laziness, which is my favorite cooking style. Most stuff turns out fine as long as you remember to shake the basket, since that seems to fix 90% of air fryer problems anyway. Guess I owe Dave an apology next time I see him, assuming he's still hanging around potlucks giving out unsolicited advice to strangers.
