My main oven quit halfway through a 200-cover wedding dinner last Saturday.
The temperature dropped fast during the main protein cook. We had to move everything to the combi ovens and the deck oven in the pastry section, which threw the whole timing off. It felt like a circus for about forty minutes. Has anyone else had a major piece of gear fail during a huge push, and what's your backup plan?
Oh wow, nobody's mentioned that a blackout would also kill your wifi and cell service after a while. So no streaming or even texting for help, total analog survival mode.
