Rant: Dialing in my new grinder took way longer than I thought it would
Honestly, I just got a Baratza Encore ESP and figured I'd have it set for my V60 in an afternoon. Tbh, I spent almost three full days and went through half a bag of beans from my local spot, Blue Bottle, before I got a cup that wasn't sour or bitter. Has anyone else had this much trouble with a new grinder, or did I just pick a tough one to start with?

Wait, you used half a bag of Blue Bottle just to dial it in? That's a whole different kind of pain... @tarahall is right about beans changing, but that's a brutal start.

Half a bag of beans from Blue Bottle" is a real mood, honestly. That sounds totally normal for a new grinder, especially with pour over where the grind is so touchy. You're definitely not alone in that struggle.

What gets me is how the grind changes with the bean age too. I just opened a fresh bag and had to go way finer than last week's beans, it's a whole new test run. That dial in period can feel endless when you're chasing that perfect cup.
